*top left1 Can Canelli (white) Beans drained and rinsed
1 Stalk Celery chopped
Handful or 2 of cherry or grape tomatoes halved
1/4 C Purple Onion sliced/chopped
1/4 C extra virgin olive oil
2 TBSP Lemon (1 small lemon)
Handful each of fresh chopped mint, cilantro, & flat leaf parsley
Salt & Pepper to taste
Mix everything together
*So simple but devine! I'm a cilantro addict, but the mint in this recipe really sets it off. Not sure where i got this recipe from. I can't find it anywhere at this moment.
