Tahini
Apple Cider Vinegar
Unsweetened Almond Milk or Water
When i made this i probably used 1/4 of a head of cabbage so i eyeball everything but i think it was about 1/4C tahini, 2-4tbsp vinegar and splashes of almond milk to thin it out then dump into your veggies, and serve!

One Skillet Simmered Cod
This was bangin. I went off of a found recipe but completely changed it for health and dietary reasons, so tis now my own creation.
Package of codfish pieces from trader joes (1-2LBS)
1 Quart box of vegetable broth
1 C Almond Milk
5-6 Cloves garlic minced
2 medium to large onions finely chopped
3-4 tbsp olive oil
salt and pepper to taste
In a large sauce pan bring broth to boil and place cod in. Lower to a simmer. Cook 10mins and flip and cook another 10. (do not put lid on). take the cod out. add rest of ingredients, bring to a boil then lower and simmer 5 or so mins. Return cod back to pan and simmer another 5 mins. At this point it should be a nice thickened sauce. If you are only cooking 1lb, u may want to half the sauceyness.. it does give a lot, but if u wanna serve w/ plain brown rice, and mound on the sauce, it's DELISH. i also love love love garlic and onions together so i always use a lot. use less if u desire!

Quick Minestrone Soup
2-3 carrots chopped
2 stalks celery chopped
1 onion chopped
3 cloves garlic minced
small cooked pasta of your choice in a bit of evoo to prevent sticking(i used brown rice pasta)
2 14oz cans of fire roasted tomatoes pulsed in a blender til smooth(i used one can that had chilis for spice)
1 quart box of vege or chicken broth
1 can kidney beans drained rinsed
1 can pinto beans drained rinsed (i just used 1/2 can but i like beans so should have used 2)
dry or fresh parsley and basil
salt and pepper to taste
Saute veggies till cooked. Add all ingredients except pasta and cook 20 mins. Add pasta when your going to serve or once soup is cooled and your going to pack in the fridge. (I dont like when pasta turns to mush or soaks up all the broth)
The key to this soup is the fire roasted tomatoes!!!
Shrimp Spring Rolls
Rice Paper
Cooked Shrimp
Cilantro
Basil
Greens (i used baby but romaine is great too)
julienned carrots and cucumbers
Bon Bon Sauce - Recipe taken from Raw Revolution
1/2 C tahini
2 Tbsp shredded ginger
1 Clove garlic Crushed
2 Tbsp tamari
2 tbsp agave (i didnt use any when i made mine)
1/2 tsp thai red curry paste (i used 1tsp and thought it could have used more)
Directions:
Blend bon bon sauce in a blender til smooth. Add water or almond milk to thin out to your liking.
Dip wrappers in water according to directions.
Lay one down on a damp cutting board and lay another one over it covering half of it horrizontally. Place your greens, then bon bon sauce, veggies, herbs and shrimp. Roll up best you can and cut in half. I then serve with more bon bon sauce but i thin it out w/ some rice wine vinegar and more tamari.
Dont serve on paper plates. they'll stick!
